Recipe of bread chaat
Ingredients

for roasting the bread :

4 slices whole wheat bread

2 tsp butter

1/2 tsp chat masala

for the chaat :

1/4 cup boiled potato chopped

1/4 cup onion finely chopped

1/4 cup tomato finely chopped

1 green chilli finely chopped

1/2 cup whisked curd

1/4 cup nylon sev

1 tbsp green chutney

1 tbsp tamarind chutney

1/4 tsp black salt

Salt to taste

1/2 tsp roasted cumin powder

1/4 tsp red chilli powder

1/2 tsp chat masala

Instructions

roasting the bread:

Collect all the required ingredients.

Take a bread slice and cut into small cubes using a pizza cutter.

Heat 2 tsp butter or ghee, and 1/2 tsp chat masala.

Then add the bread cubes.

Roast them for 3-4 minutes on low flame or until light brown and crispy.

Once done, remove the pan from flame.

making bread chaat:

Transfer these toasted bread cubes into a bowl.

Add salt, black salt, red chilli powder, cumin powder, and half of the chat masala.

Mix it well so that masalas coat with the bread pieces very well.

Then add green chillies, half of the boiled and chopped potatoes, onion, and tomato.

Again mix it well.

Serve it to a serving bowl.

Just before serving, top with some finely chopped potato, onion and tomato pieces.

Then whisked curd, green chutney, and sweet tamarind chutney.

Sprinkle sev and garnish with coriander leaves.

Serve this delicious, lip-smacking and tangy bread chaat immediately.

Finch restaurant greater kailash 2

I went for dinner at finch restaurant yesterday it’s newly opened restaurant. I want to share my experience, I am a complete foodie and go for new new places every weekend.

1)Ambience was excellent and cleanliness was also good

2)Music was very light and good

3)Hospitality very nice

4)But by the end we went to eat good food which was disappointing. We are vegetarians. I ordered for orange muddle mocktail which was too tangy.Pizza was not crisp at all. Dahi kebab were stale. Pasta was worst as there was no Italian flavour in that. Portion of pasta was very small., khatti Dal tasted good but chur chur naan was very hard, it is suppose to be soft. So the quality of food needs lot of improvement.

I would give 3/5 rating because of the first 3 points which I just mentioned.

Tamatar ka shorba

Ingredients

1 tsp besan(bengal gram flour)

12-15 large tomato roughly chopped

3 to 4 curry leaves(kadi patta)

1/2 tbsp chilli powder

Salt to taste

2tsp sugar

2tsp lemon juice

1tbsp ghee

1tsp mustard seeds (rai/sarso)

1tsp cumin seeds(jeera)

For the garnish

1tbsp chopped coriander(dhania)

Method

1)Combine the besan with 1cup of water,mix well and keep aside.

2)Boil 2cups of water in deep non-stick pan, add the tomatoes and cook for 3to4 minutes. Do not strain

3) Cool slightly ,add the curry leaves and chilli pd and blend in a mixer to a smooth puree

4) Transfer the puree to a deep non-stick pan and bring to boil

5) Add the besan mixture, salt, sugar and lemon juice mix well and simmer for 3to 4 minutes. Keep aside.

6)Heat the ghee in a small pan add the mustard seeds and cumin seeds

7) When they crackle, add the tempering to the tomato shorba and mix well.

8)Serve immediately garnished with coriander.

Dahi Ke Kebab

Ingredients

Hung yogurt 3cups

Onion chopped 1medium

Ginger chopped 1 inch piece

Green chillies chopped 3-4

Turmeric pd1/2tsp

Red chilli pd 1 tsp

Garam masala pd 1tsp

Dry fenugreek leaves(kasturi methi) 1/2tbsp

Salt to taste

Fresh coriander leaves chopped 2 tbsps

Cornflour /cornstarch 1 cup+1/4 for rolling

Oil to deep fry

Bread slices 2 crumbled

Method

Step 1

Take hung yogurt in a bowl. Add onion, ginger, green chillies, red chilli pd,garam masala pd, Kasturi methi pd, salt and coriander leaves. Mix

Step2

Add one cup of cornflour and crumbled bread mix .Divide into twelve equal Portions. Dampen your hands take a portion of the mixture, roll lightly in cornflour and shape into kebab one centimetre thick round. Prepare the other kebabs in the same way.

Step3

Heat sufficient oil in a Kadahi and deep fry the kababs till golden in colour.

Step4

Remove and place into an absorbent paper and serve hot with a chutney or sauce.

Walnut Fudge

Ingredients

Condensed milk : 1tin

Coco powder: 4tbsps

Butter: 2tbsps

Chopped walnuts: 3/4cup

Glucose biscuits: 250gms

 

Method

1) Powder glucose biscuits

2)Mix condensed milk, butter, coco powder and biscuit powder in a heavy bottom karahi.

3)Cook over slow fire till the mixture starts leaving sides of the pan

4)Add chopped walnuts and mix.

5) Grease a tray with little butter.

6)Spread the mixture in a greased tray and cool for half an hour

7)Cut into square pieces wrapped in a coloured aluminium foil and keep in air tight container.

Chenna Murki

Ingredients

Paneer 200gms

Sugar 140gms

Water 1/4cup

Karara or powdered sugar 2tbsp

Method

1) Cut paneer into 1cm by 1cm cubes

2) Add sugar to water and cooked in karahi till bubbles starts appearing

3)Add paneer cubes and cook with occasional stirring till sugar syrup reaches 1thread consistancy

4)Reduce flame and stir continuously till soft ball stage

5)Switch of the flame and stir lightly till cubes are quoted with pd sugar

6)Sprinkle karara or pd sugar and toss lightly.

Eggless Tiramisu

Ingredients

Sponge cake

Coffee syrup(To make coffee syrup 1cup of boiled water and 2 1/2 tsp of coffee) keep aside for 10minutes

1packet hide and seek biscuit

How to make custard

Take 6tsp of custard powder and mix it in 1/4 cup of water

Boil the 1cup of milk with 2 tsp sugar add custard powder mix it till becomes thick then add1/4cup of cream and 2tbsp cheese spread and blend it

Caramalised nuts Put 2tsp sugar and add nuts stir continuously.

How to arrange dish

1)Take a layer of sponge cake and soak it with coffee syrup

2)Pour custard layer

3)Then Caramalised nuts

4)Then layer it with biscuits dipping in coffee syrup

5)Add custard layer with nuts and broken biscuits

6)Dust it with coco powder .Keep in freezer for 15minutes.

Dahi kabab

Ingredients

Veg falafel

Ingredients

1/2cup chickpeas(kabuli Channa)

1/2 onion roughly chopped

1 flake garlic crushed

1 1/2 tbsp finely chopped fresh parsley or coriander/cilantro leaves

1tsp ground coriander(dhania powder)

1tsp ground cumin(jeera pd)

1/4tsp red chilli powder

1/4tsp black pepper(kalimirch pd)

1tsp salt, or to taste

2tbsp semolina (Suji)

1/2tsp baking soda(meetha soda)

1/4tsp turmeric pd

Oil for frying

Method

1) Soak the chickpeas overnight

2)Drain and place in the mixer

3)Add the onions, garlic, fresh coriander, cumin, turmeric,red chilli pd, black pepper pd. and salt. Grind to make a fine paste.

4)Add the semolina and baking soda. Mix well. Make small round balls, flatten them slightly.

5) Heat oil for frying in a wok. Fry 3-4 falafels at a time on medium heat till brown and cooked from inside.

6)Remove and drain on a paper towel. Repeat with the remaining falafels. Cook2-3 minutes. Serve hot with hummus

Note- 1/2 tsp curry powder can be used instead of cumin, coriander, turmeric and chilli powder.

Choco walnut brownie

Ingredients

Milkmaid 1/4cup

Milk 1/2cup

Castor sugar 1/2cup

Maida 1cup

Coco powder 2dsp

Chocolate melted 1/2cup

Cream 1/2cup(amul)

Vanilla essence 1tsp

Baking powder less then 1/4tsp

Meetha soda 1/4tsp

Oil 1/2cup

Walnut 1/4cup

Chocolate chip 1/4 cup

Method

1)Combineoil1/2cup,sugar,milkmaid,Chocolate, 1tspcaremel, cream on gas. Sieve Maida, Cocopd, Meetha soda,baking powder and milk slowly and slowly to the mixture. Put the mixture in the mould and put chopped walnut on that and choco chips on that .Bake it at 180degree for 25 to 30 minutes.
