Strawberry Basil Mojito

Ingredients
1/4 cup strawberry crush
1/4 cup finely chopped basil
4 lemon slices
1/4tsp salt
2 1/4 cups chilled sprite
15 icecubes
Method
1)Combine the Strawberry crush ,basil, lemon slices and salt in the muddler and muddle it using a pestle
2)Transfer the mixture in a deep bowl, add the sprite and mix well.
3) Take a glass put 5 icecubes
4)Top it with1cup of strawberry basil mixture over it.
5)Repeat steps 3 and 4 to make 2more glasses
6)Serve immediately

Tomato Tikki Chaat

Recipe of tomato tikki chaat
Ingredients
Medium tomato chopped1
Fresh tomato puree 1 cup
Oil 1 tablespo for shallow frying
Ginger finely chopped1 teaspoon
Red chilli paste 1/2 tablespoon
Poppy seeds (khus khus) 1 teaspoon
Cashewnuts broken1 tablespoon
Khoya/mawa 1 tablespoon
Cumin powder 2 teaspoons
Red chilli powder 1 teaspoon
Sugar 1/2 teaspoon
Salt to taste
Potatoes boiled, peeled and grated1 cup
Chaat masala 1 teaspoon
Fresh coriander leaves chopped1 tablespo as required
Medium onion finely chopped1
Masala chana dal 4 tablespoons
Sev 2 tablespoons
Ginger strips as required
Lemon juice as required
Method
Step 1
Heat 1 tablespoon oil in a non-stick pan. Add ginger and sauté well. Add chilli paste and mix.
Step 2
Add little water and mix. Add poppy seeds, cashewnuts and khoya, mix well and cook for a minute.
Step 3
Add 1 teaspoon cumin powder and chilli powder, mix well and cook for a minute. Add sugar and salt and mix well.
Step 4
Add tomato and mix. Add little water and tomato puree, mix well and cook till the oil separates.
Step 5
Remove from heat and set aside to cool.
Step 6
Mix together potatoes, remaining cumin powder, chaat masala, salt and coriander leaves in a bowl. Divide the mixture into small equal portions and shape them into tikkis.
Step 7
Heat some oil on a non-stick tawa. Place the tikkis on it and shallow-fry, turning sides, till equally golden brown on both sides. Drain on absorbent paper.
Step 8
To serve crush one tikki and place in each earthenware bowl. Top with some tomato mixture, some onions, 1 tablespoon masala chana dal, ½ tablespoon sev, some coriander leaves, some ginger strips and a few drops of lemon juice.
Step 9
Serve immediately.

Ingredients for Veggie Enchiladas Recipe
Corn Tortillas 6
Baked Beans as required
FILLING
Olive oil 1 tablespoon
Onion sliced 1
Garli chopped 4 cloves
Green capsicum chopped 1 medium
Baked beans 3/4 cup
Red chilli flakes 1/2 teaspoon
Mixed herbs 1/2 teaspoon
Paneer (cottage cheese) crumbled 1 cup
FOR SAUCE
Olive oil 1 tablespoon
Garli chopped 6 cloves
Tomatoe pureed 3
Sugar 1 teaspoon
Red chilli flakes 1 teaspoon
Oregano 1 teaspoon
Mozzarella cheese grated 3/4 cup

Method
Step 1
Heat oil in a pan. Add onions and sauté.
Step 2
Add garlic and green capsicum and cook till the onions are softened.
Step 3
Add baked beans, red chilli flakes and mixed dried herbs and mix and cook till almost dry.
Step 4
Preheat the oven to 200°C.
Step 5
To make the sauce, sauté garlic in one tablespoon olive oil.
Step 6
Add pureed tomatoes, sugar, red chilli flakes, oregano and half the mozzarella cheese and cook till the mixture reaches a sauce consistency.
Step 7
Place a tortilla on the work top, spread some of the filling in the centre and top with paneer.
Step 8
Roll the tortilla.Place it in a baking dish.
Step 9
Similarly make more rolls and place in the dish.
Step 10
Drizzle the tomato sauce over.
Step 11
Grate mozzarella cheese on top.
Step 12
Place the dish in the preheated oven and bake till the cheese melts.
Step 13
Serve hot.

Ingredients
Kidney beans boiled 1cups
Oil 1tbsp
Garlic chopped 1tbsp
Onion sliced 1medium
Green capsicum cut into Juliennes 1/2 medium
Carrot cut into Juliennes 1/2 small
Yellow bell pepper cut into Juliennes 1/2medium
Red bell pepper cut into Juliennes 1/2medium
Corn kernels boiled 1/2cup
Mixed dried herbs 1tsp
Crushed black peppercorns to taste
Tomatoe puree 1cup
Tomato ketchup 1/2 cup
Salt to taste
Fresh basil leaves 7to 8
Method
Step 1 )Heat oil in a non -stick wok. Add garlic and saute till golden. Add onion and saute till golden
Step 2 )Add capsicum, red pepper, carrot, yellow pepper, corn kernels and kidney beans and mix well.
Step 3 )Add fried herbs, chilli flakes, crushed peppercorns ,tomato puree and tomato ketchup ,mix and cook for 2-3 minutes
Step4) Add salt, torn basil leaves and rice lower heat and mix well. Let it get heated through
Step 5) Serve hot.

Sooji Balls

Ingredients
1cup sooji
1/2 cup curd
Salt-little salt
2tbsp water
Method
1)Put 1cup Sooji and curd in a bowl and little salt and water
2)Kneed a loose dough
3)Rest it for 15mts
Stuffing
Potatoes -2mashed potatoes
Onion -1/2 chopped finely
Ginger-1inch piece chopped finely
Green chilli -1chopped finely
Little-corander leaves chopped finely
1)Mix all the ingredients add salt, chilli powder, amchur powder ,coriander powder. Grease your hands make small balls of potato mixture.
How to make Sooji balls
1)Kneed Sooji again to make smooth, wet your hands, Take small portions of Sooji dough, stretch on your palm then put one stuffing ball on it pack it in shape of ball.Similarly make all balls
2) Heat water in large pan. Put greased strainer on it and steam for12mts .After they are steamed.
3)Heat 1tbsp oil in kadhai add curry patta, jeera and mustard seeds ,little chilli flakes and put all the balls on it and stir well. Serve with chutney .

Chocolate Ice-Cream

Ingredients
1 1/2 cup whole milk
1/2 cup unsweetened cocoa powder
1 cup granulated sugar
2 cups heavy cream
1 tsp. vanilla extract

Recipe f Coffee Chocolate Mousse


  • Milk – 1/2 liter
  • Coffee Powder – 2 teaspoons
  • Cocoa Powder – 2 tablespoons
  • Sugar – 3 tablespoons (or more if you like it sweeter)
  • Custard Powder (I use Brown and Polson, vanilla) – 3 tablespoons
  • Walnuts (optional) – 1 tablespoon
  • Chocolate bar – 100 grams

How To Make Eggless Coffee Pudding:

In a pan, bring the milk to a boil and let it simmer for ten minutes, stirring occasionally to avoid burning.

Take a few tablespoons of milk separately in a bowl, let it cool a bit and then blend in custard powder, cocoa powder and coffee powder, ensuring that no lumps are formed. When done, this should form a thick, even, brown paste.

Mix the sugar into the boiling milk pan, then add the brown paste stirring continuously. Continue to cook and stir for another five minutes on slow heat.

Switch off the heat and pour into the serving bowl in which the pudding is going to be set.

When the pudding is warm, add broken walnut pieces into it. (If you add it soon after taking off the fire, the walnuts will sink to the bottom!)

Take your favorite chocolate bar, break it into bits.

When the pudding is mildly warm (close to room temperature), decorate it with the chocolate bits.

Refrigerate the pudding and serve chilled after a few hours. When the coffee pudding sets, the surface will have a beautiful dark chocolate-studded coating.

Ingredients

Khoya -250 gm

Coconut powder -125 gm

Powdered sugar -3/4 cup

Cardamom powder – little to garnish

Ghee -1tbsp

Method

1)Heat 1tsp ghee add grated khoya ,saute for 2to 3mts. Add coconut powder and sugar and cardamom powder .Mix well.

2)Grease the tray

3)Pour the khoya mixture on it flat, let it cool for 1/2 hour then refrigerate for 1/2 an hour then cut into square pieces.

Cafe Delhi heights Sangam Courtyard R.k Puram New Delhi

I went to cafe Delhi heights Sangam courtyard Rk Puram new delhi yesterday with my family. Ambience of this restaurant is excellent. Service and hospitality was good. Music was amazing. I ordered food such as veg minestrone soup was mind-blowing, veg Benarsi aloo platter was out of the blue ,veg pizza was amazing and veg Hakka noodles was not so good .Manager of restaurant give us complementary dessert because of women’s day special and dessert was amazing.
On the whole food that I ordered was excellent. I would advise my friends and dear one’s to go to this restaurant again and again because of Its ambience,music and food stuff was excellent .It is value for money also.
